This 100% Chardonnay offers flavors of baked apple, honey, citrus, and a hint of minerality. Elegant and versatile, it pairs beautifully with roast chicken.
Crafted by Emmanuel Giboulot, a champion of organic viticulture with four decades of experience, this wine hails from Saint Romain in the Côte de Beaune. The south-facing vineyard, planted in 1975, sits on clay, limestone, and white marl soils at an altitude of 280–450 meters, benefiting from the region’s unique terroir.
The grapes, hand-harvested from 50-year-old vines, are gently pressed using a manual press. Fermentation occurs in traditional oak casks without added sulphites or yeasts, followed by malolactic fermentation. The wine is aged for 12 months in old oak barrels without lees stirring, preserving its purity and finesse.
